It is a dietary and prebiotic sweetener, obtained from the extraction of yacon juice, subjected to filtration and boiling processes, viscous consistency, pleasant taste and dark brown color that is a function of brix degrees.

Yacon has Inulin, a dietary fiber that helps the body metabolize glucose.

The yacon, although sweet, has very little glucose. What you have is almost 70% of your weight in fructooligosaccharides. These go through the small intestine without metabolizing, so they are ideal for diabetics.

They store their carbohydrates in the form of Insulin and not starch contributes control of the obesity.
