The Ají Limo (Capsicum chínense), often called Lemon Drop Pepper is a chilli that plays a fundamental role in the preparation of Ceviche, one of the most emblematic dishes of Peruvian gastronomy. Its spicy and fruity flavour adds a unique and delicious touch to this iconic Peruvian dish, which consists of fresh fish or seafood marinated in lime juice, along with other ingredients such as red onion, coriander, and Ají Limo.

The Ají Limo is not one and only, but several, as this chilli pepper exists in different colours such as intense red, yellow, green, orange, white, or purple. It is mainly cultivated in humid coastal areas of Peru, up to an altitude of 1500 meters above sea level. The fruits of this pepper measure between 1 to 12 cm and can have a spherical or elongated shape with glossy skin and some wrinkles.

Ají Limo is used to add flavour and spiciness to Ceviche. It is usually thinly sliced or finely chopped before being added to the fish or seafood during the marinating process. If you cannot order frozen Ají Limo (it is uncommon to find it fresh in Europe as it is a very fragile chili that hardly resists travel), you can happily use a few grams of our tasty Ají Limo pastes. Whatever its presentation or colour, the Ají Limo provides a touch of intense spiciness and a characteristic fruity and citric taste, which enhances the flavours of the Ceviche.

Ají Limo also enhance the marinating process by interacting with the lime juice, which contributes to lightly cook the fish or seafood, resulting in a firm texture and fresh flavour.

In addition to its traditional use in Ceviche, Ají Limo can be an interesting spicy component in cold sauces, soups, stews and garnishes. Due to its strong lemony flavour, this chilli pepper will most often remain incorporated into seafood and fish dishes.
