It is an old system to conserve the food that is used for the dry potato. The potatoes are boiled, dried in the cold wind and the mountain sun until they are very hard. Then they break into small pieces. For cooking they are reconstituted first by roasting or roasting them and then cooked in liquid. The dried potato is mostly found in the typical Carapulcra dish.
