The Queso fresco is a fresh unripened Peruvian white cheese with a firm texture. Mild and fresh, the Queso fresco is traditionally eaten with a Choclo corncob and is used as an ingredient in various recipes of Peruvian dishes and sauces such as Huancaína sauce and Ocopa sauce. Due to sanitary complications, this Peruvian cheese is hardly ever available outside of Peru. You can easily replace it with French cheese like "Brousse" or Italian "Ricotta" cheese, which are widely available in your supermarket or local dairy shop. If you have a Turkish grocery shop near you, the Turkish cheese "Beyaz Peynir" is an even better substitute for genuine Peruvian Queso fresco.
